STORY:
We planted our first Souvignier gris vines in 2006 – a bold move back then. Today, this grape is a cornerstone of our work. Expressive, balanced, with clarity and strength – in the vineyard and in the glass.

Perfect for an aperitif on the terrace. A wine that makes the first sip effortless and invites you to keep going.
FAVORITE PAIRINGS:
Classic South Tyrolean: Speck, Schüttelbrot, mountain cheese. Or simply: a plate of Schlutzkrapfen – a true comfort dish.

Souvignier Gris – white wine
SITE & SOIL:
Eppan, between 270 and 400 m a.s.l. Loamy, calcareous, deep soil with a high content of white dolomite rock.
HARVEST & VINIFICATION:
Carefully handpicked on 16 and 17 August 2022. Gently destemmed, spontaneous fermentation with wild yeasts. Aged for 12 months on full lees in large wooden barrels, followed by 8 months on fine lees in stainless steel. Bottled unfined and unfiltered in May 2024. Further bottle aging followed.
